30g Cheddar cheese (match box size)
1 tomato, sliced
1 scallion, finely chopped or 1 tablespoon finely chopped onion
1 teaspoon softened butter, if desired
salt (optional) and freshly ground black pepper
Scatter the cheese on one slice of the bread and cover with the slices of tomato and scatter the scallion or onion on top. Season lightly with salt (optional) and freshly ground black pepper.
Cover the ingredients with the second slice of bread. Spread with the butter, if desired and either cook on a preheated frying pan for a couple of minutes on each side until the cheese has melted or use a toasting bag and pop in the toaster.
To serve, cut the cheese and tomato toastie on the diagonal and put on a plate to serve.
